If you happen to have a hankering for nachos but maybe you need something less "carb forward" - then this may be your new go-to! Using pork rinds as the base creates the best texture and a perfect vessel for all your favorite toppings. Ground beef is always a win here, perfectly seasoned with a southwestern kick. Feel free to use shredded chicken or your favorite protein as desired, the possibilities are endless! I like to serve these with a side of homemade guacamole and salsa.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Layer pork rinds evenly on a standard baking sheet, set aside.
  2. To make taco meat, add ground beef to a medium sized pan, breaking apart to cook. Add spices and continue to break apart and cook until no longer pink. Finish off by adding lime juice and cilantro, simmering to fully incorporate.
  3. When ready to enjoy, pour queso on top of pork rinds, followed by up to 1 cup of taco meat as desired.
  4. Sprinkle with remaining toppings as desired, then serve immediately.
