yes, the title is exactly what it sounds like — a pancake as a bagel (genius, right?!) 🥞💥
we took the classic lox bagel & gave it the ultimate glow-up:

Ingredients
pan-bagel
- 222 greek yogurt protein pancakes & waffles (click for recipe), i made 2 large "pan-bagels"
whipped avocado schmear
- 3-4 Tbsp3-4 Tbsp3-4 Tbsp Avocado
- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Capers, just the juice
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 tsp1 tsp1 tsp Lemon Zest
- 1/2 tsp1/2 tsp1/2 tsp Everything Bagel Seasoning

toppings
- Smoked Salmon, or lox

- Cucumber, sliced
- Radish, sliced
- Frozen Mixed Berries
- Goat Cheese, or feta cheese
- Microgreens, or fresh herbs
- Everything Bagel Seasoning

- Red Pepper Flakes

- Paleo Sunrise Granola: Hazelnut, Almond Butter & Pecan - Nana Joes, or any nuts or seeds

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
pancake bagel
- make a batch of protein pancakes & cut a hole in the center to make a bagel (of course, keep it for eating! - you can also make your pancakes with the hole in it - just put the batter around a heat-safe circle. I used little lid!)
- reheat in a skillet for 2-3 minutes/side to toast.
whipped avocado schmear
- add all ingredients to a food processor; blend until smooth & creamy.
building your pan-bagel:
- to a pan-bagel, add whipped avocado schmear, smoked salmon & any other delicious toppings you desire.
- plate with any other sides & toppings & devour!
