Mandarin Cranberry Salad
This mandarin orange salad is the perfect side salad for your next summer gathering that you can easily whip together in just 5 minutes!
Ingredients
- 2 cup2 cup2 cup Baby Spinach
- 2 whole2 whole2 whole Tangerines (Mandarin Orange)
- 0.25 cup0.25 cup0.25 cup dried, unsweetened Cranberries
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil
- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 0.25 cup0.25 cup0.25 cup Sunflower Seeds

- In a large bowl, toss the spinach, mandarin oranges, and cranberries, until combined.
- In a mason jar, add the olive oil, dijon mustard and maple syrup (or if you’re lazy like me, you can chuck it straight on the salad). Shake until well combined. Pour dressing over the salad and toss until well coated.
- Top with sunflower seeds and enjoy!
