Chicken Mandarin Cranberry Walnut Salad
This Chicken Mandarin Cranberry Walnut Salad was one of my very first chicken salad recipes when I started Whole30 back in 2018. It is still a favorite here and we just love all the flavors from the sweet mandarins, tangy cranberries and crunchy walnuts! The dressing has a secret ingredient in it and trust me it adds just the right amount of zing to this delicious salad!
Ingredients
- 1.5 lb1.5 lb1.5 lb Skinless Chicken Breast, roasted and diced
- 0.25 cup0.25 cup0.25 cup Red Onion, diced
- 0.5 cup0.5 cup0.5 cup Celery, diced
- 0.5 cup0.5 cup0.5 cup Organic Walnuts, chopped
- 0.5 cup0.5 cup0.5 cup dried, unsweetened Cranberries
- 2 whole2 whole2 whole Tangerines (Mandarin Orange), slices cut in half
- 1 Tbsp1 Tbsp1 Tbsp Spicy Brown Mustard
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
- 1/2 cup1/2 cup1/2 cup Avocado Oil Mayonnaise
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix together in a small bowl, mayonnaise, mustard, salt & pepper.
- In a larger bowl combine all remaining ingredients and toss well.
- Add mayonnaise mixture to chicken and toss to combine.
- Enjoy!
