Maple Apple Cinnamon & Pecan Gluten Free Loaf
Cozy weather is slowly approaching and this means I'm getting creative in the kitchen with warm flavours. I was so happy to put together this gluten free loaf for my family to switch things up. It's low in sugar and perfect heated up the following morning with a cup of coffee.
Ingredients
Wet
- 0.5 cup0.5 cup0.5 cup Maple Bliss Nut Butter - Mixed Up Foods

- 0.333 cup0.333 cup0.333 cup Pure Maple Syrup
- 2 whole2 whole2 whole Eggs, (room temp)
- 0.75 cup0.75 cup0.75 cup Milk, (or replace with milk of choice)

- 1 tsp1 tsp1 tsp Vanilla Extract

- 1 whole1 whole1 whole Apple, Organic, (diced)
Dry
- 1.5 cups1.5 cups1.5 cups Gluten-Free All-Purpose Flour - Primal Palate

- 1 tsp1 tsp1 tsp Baking Powder

- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 1.5 tsp1.5 tsp1.5 tsp Cinnamon, Ground

- 0.25 tsp0.25 tsp0.25 tsp Nutmeg, Ground
- 0.25 tsp0.25 tsp0.25 tsp Kosher Salt

- 0.333 cup0.333 cup0.333 cup Organic Sprouted Pecans - Lark Ellen Farm, (roughly chopped)

Topping
- 1 Tbsp1 Tbsp1 Tbsp Turbinado Sugar, (optional: for topping)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F
- Spray a loaf pan with avocado oil (or any cooking oil you please)
- Wash, peel, and dice up your apple, set aside
- Chop your pecans and set aside
- In a large bowl mix together; nut butter, maple syrup, eggs, milk, and vanilla until combined
- To that same large bowl add in; gluten free flour, baking powder, baking soda, cinnamon, nutmeg, and salt, combine once again
- Mixture should be quite thick, do not over mix
- Fold into the batter your diced apples and pecans
- Pour mixture into loaf pan
- Top off with whole pecans and turbinado sugar for garnish if desired
- Bake for 40 to 45 min until a toothpick comes out dry
- Allow to cool on counter for at least 15min
- Slice and enjoy!
Notes
Serve warm or at room temp! Best stored in the fridge for future use.
