Mediterranean Meatballs & Tzatziki
I love the flavors of the Mediterranean. With the weather getting warmer it makes me think summer is just around the corner! The flavors of lemon, dill, and cucumber scream warmer weather is on the way. I hope you enjoy this recipe as much as my family does.
Ingredients
Tzatziki
- 1.5 cups1.5 cups1.5 cups Plain Greek Yogurt
- .5 whole.5 whole.5 whole English Cucumber, Small dice
- 3 pieces3 pieces3 pieces Green Onion (Scallion), Sliced thin
- 2 cloves2 cloves2 cloves Garlic, Minced
- 2 Tbsp2 Tbsp2 Tbsp Flat Leaf Parsley, Small chop
- 2 Tbsp2 Tbsp2 Tbsp fresh Dill, Small chop
- 1 tsp1 tsp1 tsp Salt
- .25 tsp.25 tsp.25 tsp Black Pepper
- .5 whole.5 whole.5 whole Lemon, Juiced
Meatballs
- 1 lb1 lb1 lb Ground Beef
- .5 whole.5 whole.5 whole Onion, Small dice
- .5 whole.5 whole.5 whole Bell Pepper, Small dice
- .25 whole.25 whole.25 whole Fennel, Small dice
- 2 cloves2 cloves2 cloves Garlic, Minced
- 2 Tbsp2 Tbsp2 Tbsp Flat Leaf Parsley, Small chop
- 1 tsp1 tsp1 tsp Salt
- .5 tsp.5 tsp.5 tsp Black Pepper
- 1 tsp1 tsp1 tsp Paprika
- 1 whole1 whole1 whole Egg

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Tzatziki
- In a small bowl blend all ingredients together.
- Refrigerate for an hour or more.
- Meatballs
- Get a cookie sheet put parchment paper on it and then a cooking rack.
- Preheat oven to 360 degrees.
- Add all ingredients in a large bowl and using clean hands combine until ingredients are incorporated.
- Using large scoop, scoop up meat and then roll into a ball, should be about 10 meatballs.
- Place on rack, leaving an inch or more between each.
- Cook for 40 minutes or until temp is 160 degrees inside each meatball.
Notes
This recipe is delicious when made with half beef and half lamb if you like to mix it up. If you consume wheat these meatballs and tzatziki is tasty inside naan bread or a pita. You can use a smaller scoop as well to make smaller meatballs. I like doing this for when I make sandwiches. Cook for 25 or so minutes. Whatever size, they are tasty!
