The best tzatziki I've ever had was in Greece, and I made this with that memory in mind. It's so easy to whip up and so refreshing in the summer!

  1. Peel and grate the cucumber, and let extra water drain.
  2. Combine yogurt, cucumber, and all other ingredients listed and beat until smooth and creamy and slightly thinner than normal greek yogurt.
  3. Garnish with extra olive oil and parsley.
  4. Serve chilled!
