Mediterranean Orzo Salad
Mediterranean Orzo Salad just screams fresh, summer meal enjoyed with the people you love. I don't know how else to explain it! Enjoyed either warm or cold, my gluten free orzo salad makes for the perfect dinner or side dish at your next get together! It only takes a few fresh ingredients to make this fantastic dish, so let's get into it!
Ingredients
- 12 oz12 oz12 oz Gluten Free Orzo Pasta
- 111 Cucumber
- 1 pint1 pint1 pint Grape Tomatoes
- 3 cloves3 cloves3 cloves Garlic, minced
- 0.50.50.5 Red Onion, diced
- 111 Lemon
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 6 oz6 oz6 oz Feta Cheese
- 1 bunch1 bunch1 bunch Parsley

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Bring a pot of water to boil and cook your orzo according to the package instructions.
- Prep and chop your cucumber, grape tomatoes, garlic, and red onion.
- Place in a large mixing bowl and toss with the juice of one lemon. Season generously with salt and pepper.
- Once the orzo is cooked, drain the water and toss the orzo with olive oil. Once it has cooled slightly, add into the vegetable mixture along with the feta cheese.
- Top with parsley if desired and serve! Dish can be served warm or cold and is best accompanied with chicken, salmon, or lamb!
