This Mediterranean Salmon is baked with garlic, lemon, oregano, and olive oil for a light, flavorful dinner that comes together in under 25 minutes. It’s simple, healthy, and perfect for a weeknight meal.

  • 1 Shallot, small, about 3 tablespoons), finely chopped
  • 2 Lemon Juice
  • 1 tsp Lemon Zest
  • 2 Garlic, cloves, finely chopped
  • 1 tsp Kosher Salt
  • .5 tsp Black Pepper, ground
  • .5 tsp Red Pepper Flakes, (optional)
  • .333 cup Olive Oil, extra-virgin
  • dried oreganodried oregano
  • 3 Lemon Juice, (from one lemon)

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 425u2109.
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, combine the dill, olive oil, shallot, lemon juice, lemon zest, garlic cloves, dried oregano, salt, pepper, and red pepper. Set aside.
  4. Place the salmon on the baking sheet, skin side down. Pat dry with paper towels. Spread the sauce over the salmon making sure to spread the sauce on the sides of the salmon as well.
  5. Bake until the salmon is cooked through and flakes easily with a fork, 8-12 minutes. Use an instant-read thermometer inserted into the thickest part. The fillet should register between 120u00b0 and 130u00b0 for medium-rare.
  6. When the salmon is done, place the salmon on a plate.
  7. Prepare the topping by combining the olive oil, dried oregano, and lemon juice in a small bowl. Spoon the sauce over the top of the salmon and serve.

Notes

Store the leftover salmon in an airtight container in the refrigerator for up to 2 days. You can bake and freeze the salmon. Defrost the salmon in the refrigerator overnight and reheat in a pan. Avoid using the microwave as it can dry out the salmon. Leftover salmon is delicious! Enjoy the salmon flaked into a salad, topping a grain bowl, or made into a salmon dip. I love this leftover salmon eaten cold the next day!
