Melon Chia Pudding
Move over boring chia pudding, this melon infused variation is so fantastic!! You can use honeydew or cantaloupe, but either way, you're going to enjoy this one! Add fresh fruit of choice as well as any toppings you might like to add some crunchy texture like chopped nuts or granola!
Ingredients
- 3 cups3 cups3 cups Honeydew melon, or cantaloupe, cubed
- 1 cup1 cup1 cup Coconut Milk, full fat, or milk of choice
- 3-4 Tbsp3-4 Tbsp3-4 Tbsp Raw Honey, tblsp
- .125 tsp.125 tsp.125 tsp Sea Salt
- 1 whole1 whole1 whole Lime, juice of one, zest
- 10 Tbsp10 Tbsp10 Tbsp Chia Seeds, I used the white variety

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place melon, coconut milk, honey, salt, lime zest and juice in a high powered blender. Blitz until the melon is completely smooth and honey is fully incorporated. Pour into a mixing bowl, taste and add a bit more salt if needed.
- Pour chia seeds into the melon mixture and whisk until well combined. Place in the refrigerator for 15 minutes. Whisk again to insure all chia seeds are separated and fully combined. Pour into an airtight container and let set overnight.
- Serve with fruit/toppings of choice
