Melon Horchata (Edit recipe)

Don't throw out those seeds next time you cut open a melon!! Blitzing them in your Almond Cow or high powered blender* makes this beverage so easy to enjoy! An horchata is basically a drink made by grinding up nuts, rice, seeds or even berries. This melon horchata recipe has a kiss of lime and vanilla and is sweetened with honey. Truly such a refreshing drink!!

Ingredients

  • 1 whole Cantaloupe, seeds only for recipe, save melon for later
  • 3 - 3.5 cups Water, depends on how flavorful the melon is
  • 4 - 6 Tbsp Honey, personal taste as to how sweet you want it
  • 1 - 2 whole Lime, zest & juice of limes
  • 1 - 2 pinch Redmond Real Salt

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place seeds in the filter basket and attach to the top of the Almond Co. Add 2 cups of water to the collector cup and place inside the base. Secure the top then process as directed.
  2. Pour contents into a larger measuring cup along with the additional 1-1.5 cups of water, lime zest/juice, honey and salt. Whisk to fully combine and chill!
  3. For optional garnish, use a melon baller to create melon spheres and add to a cocktail pic with lime slices.
  4. Store in the refrigerator, stir well before pouring! To serve, pour over ice and add garnish as desired. A little sprinkle of sugar on top of the horchata and cocktail pic is very fun, but optional.

Notes

HIGH POWERED BLENDER OPTION: Blend seeds with 2 cups of water until pulverized. Pour through a fine mesh sieve into a large bowl. You should have a nice mild orange liquid. Return seeds to the blender with 1 cup of water and repeat, adding this to the initial mixture. Pour all of this through a nut bag into a pitcher or large mixing bowl, removing any seed particles leftover and discard. Add lime juice honey and salt, whisking well to combine and chill!
