Mexican Rice
A staple side dish in Mexican cooking, Mexican rice, or Spanish rice (whatever you call it), is surprisingly easy to make and comes together in less than 30 minutes. As far back as I can remember, it was one of the first dishes my mom taught me how to cook. Every grade school potluck, you could count on me to bring this dish. Now, I rarely make a Mexican meal without it. Provecho amigos!
Ingredients
- 1.5 cup1.5 cup1.5 cup Long Grain White Rice, uncooked, Jasmine Rice works great as well!
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Avocado Oil
- 8 oz8 oz8 oz Tomato Sauce
- 0.25 cup0.25 cup0.25 cup White Onion
- 1 tsp1 tsp1 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 1.25 Tbsp1.25 Tbsp1.25 Tbsp Knorr Granulated Chicken Bouillon
- 3 cups3 cups3 cups Water
- .5 - 1 tsp.5 - 1 tsp.5 - 1 tsp Real Salt - Redmond, To taste
- 2 sprigs2 sprigs2 sprigs Cilantro, For cooking
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Cilantro, Finely Chopped, for garnish
- 2 whole2 whole2 whole Chicken Instant Bone Broth - Bare Bones, For an added protein boost - be careful when adding salt.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat avocado oil in a deep skillet or pot over medium-high heat. Add the onion and rice, stirring constantly until both turn golden brown. The toastier the rice, the more flavorful it will be, but be careful not to burn it.
- Add the tomato sauce and stir to coat the rice, letting it toast for another minute.
- Season with bouillon, onion powder, and garlic powder, stirring well to combine.
- Carefully pour in the water and stir well. If using bone broth packets, add them now. Bring the mixture to a rolling boil, then add two sprigs of cilantro. Cover with a tight-fitting lid, reduce the heat to low, and let the rice simmer.
- Taste the broth before covering and adjust with salt as needed.
- Once the rice is fully cooked, remove it from the heat and fluff with a fork.
- Garnish with fresh cilantro and serve immediately.
