Nacho Cheese Sauce
This nacho cheese sauce version is so simple, uses just a few ingredients, and comes together fast. It’s spreadable, pourable, and dangerously good in all the ways you want a cheese sauce to be.
Ingredients
- 1.5 cup1.5 cup1.5 cup Cheddar Cheese, shredded

- 1 cup1 cup1 cup Monterey Jack Cheese, shredded
- 1 Tbsp1 Tbsp1 Tbsp Cornstarch
- 1.5 cups1.5 cups1.5 cups Evaporated Milk
- 1 Tbsp1 Tbsp1 Tbsp Green Chiles, Fire Roasted, canned
- 0.5 tsp0.5 tsp0.5 tsp Taco Seasoning - Primal Palate

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 1 pinch1 pinch1 pinch Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Shred the cheddar and Monterey Jack. Add both cheeses to a bowl and toss with the cornstarch, making sure the cheese is coated as evenly as possible.
- In a medium saucepan over medium heat, warm 1 ½ cups (12 oz. can) of evaporated milk for about 2 minutes.
- Add the cheese a little at a time, stirring constantly with a wooden spoon. Let each addition melt before adding more. Once all the cheese is incorporated and smooth, stir in the green chiles, taco seasoning, garlic powder, and a pinch of salt.
- Continue stirring until the sauce is silky and fully melted. Adjust salt if needed.
Notes
- Consistency tip: For a thicker, dippable sauce, use less evaporated milk. For a smoother, pourable sauce, add a little more.
- This recipe works best with freshly shredded cheese. Pre-shredded, bagged cheese doesn’t melt the same way and can give you a grainy or clumpy sauce.
- If the sauce thickens as it sits, just stir in a splash more of evaporated milk (or regular milk) while reheating.
- Taste and adjust seasoning at the end—cheese brands vary.
