Zucchini Salad with Lemon & Mint
Grab that garden zucchini and make this easy, beautiful summer salad. Thinly sliced zucchini and yellow squash soak up a bright lemon, olive oil and fresh mint dressing, then get finished with cracked black pepper and crumbled cheese. Fresh, simple and made for peak zucchini season.
Ingredients
- 1 whole1 whole1 whole Zucchini, sliced thin
- 1 whole1 whole1 whole Yellow Squash, sliced thin
- 2 Tbsp2 Tbsp2 Tbsp Original Extra Virgin Olive Oil - Kosterina

- 1 whole1 whole1 whole Lemon, freshly squeezed

- 2 Tbsp2 Tbsp2 Tbsp Mint Leaves, chopped
- 1 pinch1 pinch1 pinch Salt and Pepper
- 0.25 cup0.25 cup0.25 cup Blue Cheese Crumbles, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Using a mandoline, slice the zucchini and yellow summer squash vertically into long, very thin slices.
- Drizzle the olive oil directly onto a large serving plate or shallow platter. Squeeze the lemon juice over the oil, tear in the fresh mint leaves and season with salt and freshly cracked black pepper. Stir together with a fork.
- Add the sliced zucchini and yellow squash to the plate. Using your hands, gently toss the slices in the dressing, separating them as you go so every piece is well coated.
- Let the salad sit at room temperature for at least 20 minutes to allow the zucchini to soften slightly and soak up the lemon, olive oil and mint.
- Just before serving, gently toss again and finish with plenty of freshly cracked black pepper. Top with crumbled blue cheese, if using.
Notes
A mandoline works best for getting consistently thin slices. For the best texture, use smaller, firm zucchini and summer squash. The salad is best after resting for about 20 to 30 minutes. Blue cheese is the favorite around here, but feta or goat cheese are both delicious. Or skip the cheese entirely for an even lighter salad.
