  1. 1. In a mixing bowl, add your almond flour, gluten free all purpose flour, coconut oil and maple syrup. Mix together until the cookie dough texture forms.
  2. 2. Fold in chocolate chips.
  3. 3. On a piece of parchment paper, spread cookie dough batter and press into a square. Fold the parchment paper over to cover the top. Place in freezer for 1 hour.
  4. 4. Remove from freezer and slice into squares. Scoop ice cream onto a square and make a sandwich. Place back in the freezer until ice cream hardens.
