No Bake Cookie Dough Ice Cream Sandwiches

Ingredients
- 1 cup1 cup1 cup Almond Flour
- 0.25 cup0.25 cup0.25 cup Bob's Red Mill Gluten Free All Purpose Baking Flour
- .25 cup.25 cup.25 cup Pure Maple Syrup
- .25 cup.25 cup.25 cup Coconut Oil
- 0.5 cup0.5 cup0.5 cup Baking Chocolate Chips
- 1 cup1 cup1 cup Vanilla Ice Cream

- 1. In a mixing bowl, add your almond flour, gluten free all purpose flour, coconut oil and maple syrup. Mix together until the cookie dough texture forms.
- 2. Fold in chocolate chips.
- 3. On a piece of parchment paper, spread cookie dough batter and press into a square. Fold the parchment paper over to cover the top. Place in freezer for 1 hour.
- 4. Remove from freezer and slice into squares. Scoop ice cream onto a square and make a sandwich. Place back in the freezer until ice cream hardens.
