No-Bake Gingerbread Cookies (high protein/gluten-free)
These adorable gingerbread cookies are actually a healthy snack in cookie form! Made from simple, wholesome ingredients, these cookies are gluten-free, vegan and higher in protein.
Ingredients
- 0.5 cup0.5 cup0.5 cup Oat Flour

- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Nuzest
- 0.5 cup0.5 cup0.5 cup Almond Butter

- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 2 Tbsp2 Tbsp2 Tbsp Molasses
- 1 tsp1 tsp1 tsp Cinnamon, Ground

- 0.25 tsp0.25 tsp0.25 tsp Ginger, Ground

- 3 Tbsp3 Tbsp3 Tbsp Mini Chocolate Chips, Semi-Sweet, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add oat flour, protein powder, almond butter, maple syrup, molasses, cinnamon and ginger to a bowl. Stir to combine.
- Roll dough out into roughly 1/2 inch thickness. Use cookie cutter to make gingerbread men cutouts.
- Set cookies onto a lined baking sheet and add mini chocolate chips as buttons, if desired.
- Chill in the fridge to firm up.
Notes
Amount of cookies made will depend on size of cookie cutter used. I used a mini gingerbread cookie cutter.
