These adorable gingerbread cookies are actually a healthy snack in cookie form! Made from simple, wholesome ingredients, these cookies are gluten-free, vegan and higher in protein.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add oat flour, protein powder, almond butter, maple syrup, molasses, cinnamon and ginger to a bowl. Stir to combine.
  2. Roll dough out into roughly 1/2 inch thickness. Use cookie cutter to make gingerbread men cutouts.
  3. Set cookies onto a lined baking sheet and add mini chocolate chips as buttons, if desired.
  4. Chill in the fridge to firm up.

Notes

Amount of cookies made will depend on size of cookie cutter used. I used a mini gingerbread cookie cutter.
