No Bake Green Sugar Cookies
These are quite literally perfect for your picky toddler. They’re green, fun and they taste amazing! Just like a sugar cookie, only better. These cookies are packed with nutrients, including veggies!! What better way to get veggies into your toddler than through the art of cookies!
Ingredients
- 0.5 cup0.5 cup0.5 cup Gluten-Free Rolled Oats
- 1 cup1 cup1 cup Baby Spinach
- 0.5 cup0.5 cup0.5 cup Agave Nectar Syrup
- 2 Tbsp2 Tbsp2 Tbsp Butter, Unsalted - Kerrygold, Softened
- 1.5 cup1.5 cup1.5 cup Almond Flour
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 whole1 whole1 whole Vanilla Collagen Fuel - Primal Kitchen
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a blender, add your oats, spinach and 1 tbsp of water. Blend until the spinach and oats are puréed. Add to a mixing bowl.
- To the same bowl, add all other ingredients. Using a fork, stir together until the batter becomes cookie dough like.
- Scoop batter onto parchment and press cookie dough down to form a cookie. Place in the freezer to let them harden. Enjoy!
