These no bake high protein energy balls are the perfect snack to get you through the day. They are made with simple ingredients you probably already have in your kitchen, and require just 10 minutes to make. You can pop these in the fridge or freezer to store, and grab one whenever you’re craving something sweet to hold you over between meals. Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cut open your dates and remove the pit.
  2. In a small bowl, soak your dates in boiling water for 5 minutes until softened. Drain and set aside.
  3. To a food processor, add all ingredients and pulse together, ensuring to pause and scrape down the sides. If you find the mixture is too dry, add 1 extra tsp of water.
  4. Use a small cookie scooper or a teaspoon to roll into balls. Place on a lined baking sheet and set in the freezer for 10-15 minutes. Transfer to a container and store either in the fridge or freezer, depending on how quickly you will eat them (see notes).

Notes

How to store: store in an airtight container in the freezer for 1 month, or in the fridge for 1 week.
