Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the oil, maple syrup, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Mix in the chopped dates and chocolate chips
  6. Scoop small portions of dough onto the prepared baking sheet, spacing them out. Gently flatten each cookie with the back of a spoon, as they won't spread much during baking.
  7. Bake in the preheated oven for 10-12 minutes, they will firm up as they cool
  8. Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes. Transfer to a wire rack if desired, to cool completely.

Notes

Store the cookies in an airtight container at room temperature for up to a week.
