Paleo Apple Pie Bars (Vegan)
These easy paleo apple pie bars have chewy almond flour crust and gooey apple filling. They're baked in the oven and best served with a dollop of coconut cream or vanilla ice cream. This recipe is paleo, vegan and gluten free!
Ingredients
Crust
- 1.5 cups1.5 cups1.5 cups Almond Flour, (140g)
- 0.333 cup0.333 cup0.333 cup Tapioca Starch, (40g)
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 0.25 tsp0.25 tsp0.25 tsp Redmond Real Salt
- 0.25 cup0.25 cup0.25 cup Coconut Oil, melted
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup
- 1 Tbsp1 Tbsp1 Tbsp Water
Filling
- 4 whole4 whole4 whole Honeycrisp Apples, (500g or about 5 cups chopped)
- 3 Tbsp3 Tbsp3 Tbsp Coconut Oil, melted
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Lemon Juice, (optional)
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1 Tbsp1 Tbsp1 Tbsp Tapioca Starch
- 1 tsp1 tsp1 tsp Ground Cinnamon

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees F. Line an 8" x 8" glass baking dish with parchment paper.
- For the Crust: In a medium-sized mixing bowl, combine all dry ingredients for the crust. This includes the almond flour, tapioca starch, cinnamon and salt. Mix, then add in the remaining crust ingredients (coconut oil, maple syrup, water). Mix first with a spatula,then use your hands to combine the dough.
- Firmly press the crust dough into the baking dish. Set aside.
- For the Filling: Thinly slice the apples and cut into about ½" pieces (remove the core, but no need to peel the skin). Place the cut apples in a large mixing bowl and combine with the coconut oil, maple syrup, lemon juice and vanilla. Then mix in the tapioca starch and cinnamon.
- Place the apples on a large frying pan and cook on medium heat for 10-12 minutes, or until tender. Stir frequently so that the mixture doesn't burn. The apple filling is done when the apples are soft and the mixture has thickened.
- Pour the apple filling over the crust and smooth out in an even, level layer.
- Place in your preheated oven and bake at 350 degrees F for 30 minutes.
- After baking, remove from oven and cool in pan to room temperature.
- Bars cut best after sitting a night in the fridge, but can be eaten warm or cold.
- Store in an airtight container in the fridge or freezer.
