Paleo Lime Dragonfruit Cookies
The fabulous color is all natural, thanks to dragonfruit. These are so fresh and tropical you'll think you were on vacation in Hawai'i.
Ingredients
Lime Cookies
- 2.25 cups2.25 cups2.25 cups Almond Flour
- .25 cup.25 cup.25 cup Tapioca Starch, or arrowroot flour
- .5 tsp.5 tsp.5 tsp Baking Soda
- .25 tsp.25 tsp.25 tsp Sea Salt
- .33 cup.33 cup.33 cup Ghee, room temperature
- .5 cup.5 cup.5 cup Coconut Sugar
- 1 whole1 whole1 whole Egg, room temperature
- 2 tsp2 tsp2 tsp Lime Zest
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
Dragon Fruit Frosting
- .5 cup.5 cup.5 cup Organic [*Spectrum Brand, sustainably sourced] Palm Oil Shortening
- .5 cup.5 cup.5 cup Tapioca Starch
- .25 cup.25 cup.25 cup Honey
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.125 tsp0.125 tsp0.125 tsp Salt
- 2 tsp2 tsp2 tsp Freeze Dried Dragon Fruit, ground into powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Cookies
- Preheat oven on 350 degrees. Prepare a 2 baking sheets with parchment paper and set aside.
- In a large bowl combine almond flour, tapioca flour, baking soda and salt. Stir.
- In a small bowl combine all of the remaining ingredients and stir.
- Stir the wet ingredients into the dry and stir until combined.
- Refrigerate for 15 minutes. This step helps the ghee set up a bit.
- Using a medium ice cream scoop, scoop out the cookie dough onto baking sheets. At least 2” apart. Press lightly with your fingers to flatten just slightly. Makes 16-17 cookies.
- Bake for 12-13 minutes. Turn halfway through time.
- Remove and let cool on baking sheet while you prepare the frosting.
Frosting
- Combine all ingredients in a bowl and stir well using a spatula. If you need to adjust the consistency you can add a teaspoon of almond milk to loosen it or add a teaspoon more tapioca flour to make it firmer.
- When cookies are cool frost them and if you like you can sprinkle the top with lime zest or colored sprinkles of your choice. Enjoy.
Notes
If you can't find freeze dried dragon fruit then you can use any red freeze dried fruit or vegetable, beets, raspberries, strawberries all work great as a substitute.
