Passion fruit Habanero filled muffins (gf)
Muffins with a twist? You'd never think to fill a Muffin with passion fruit Habanero Jam until now. These muffins are thick yet soft and the passion fruit gives it a pop of flavor.
Ingredients
- 2 cups2 cups2 cups Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
- 8 Tbsp8 Tbsp8 Tbsp Butter, Salted, Room temp
- 222 Eggs
- 0.333 cup0.333 cup0.333 cup Sour Cream
- 0.5 cup0.5 cup0.5 cup Granulated White Sugar
- 0.5 cup0.5 cup0.5 cup Brown Sugar
- 1 tsp1 tsp1 tsp Baking Powder
- 1 tsp1 tsp1 tsp Baking Soda
- 2 tsp2 tsp2 tsp Vanilla Extract
- 0.5 cup0.5 cup0.5 cup Almond Milk
- 0.333 cup0.333 cup0.333 cup Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
- 1 Tbsp1 Tbsp1 Tbsp Granulated White Sugar
- 1 tsp1 tsp1 tsp Brown Sugar
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- 4 Tbsp4 Tbsp4 Tbsp Butter, Salted, Melted
- 0.333 cup0.333 cup0.333 cup Powdered Sugar
- 1 Tbsp1 Tbsp1 Tbsp Almond Milk

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees Fahrenheit
- Let's start with the crumble, in a small bowl mix butter, flour, sugar and cinnamon
- You can use a fork and mix the ingredients together
- This should form a dough consistency that can be broken apart or softly pushed together
- In a large bowl cream together room temperature butter and sugars with a handmixer
- Once light and fluffy add in the eggs one at a time
- Next, add the vanilla extract and sour cream
- Then add the flour, baking soda and baking powder but do not mix yet
- Add the milk and then use a handmixer to combine all ingredients thoroughly
- Spray a Muffin pan
- Add cut parchment paper or Muffin liners to a Muffin pan
- Scoop Muffin batter and fill liner
- You can Sprinkle the crumble on top or choose to leave the crumble off
- Bake at 350 degrees F for 25-28 minutes
- While allowing muffins to cool for 15 minus start on your drizzle
- In a small bowl combine confectionery powdered sugar and milk with a fork
- Using a straw or small piping bag fill each muffin with passion fruit Habanero Jam
- Then use your fork and drizzle each muffin with icing
Notes
I used a medium cookie scoop / 2 oz per liner. In order to create a hole inside the muffin I used a glass straw to create a well for the filling.
