Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. First off bring your water to a boil and add salt to boiling water.
  2. Cook your pasta until al dente (10 mins or slightly less).
  3. In your pan on medium heat, add your 2 tbs of olive and 1 tbs of butter.
  4. Peel your lemon rind and cook for about 1 min then remove and set aside.
  5. Reduce heat to medium - low then add your minced garlic.
  6. If it browns, that’s okay, just make sure it doesn’t burn.
  7. Add the juice of 1 whole lemon or slightly less if you like.
  8. Give it a good mix and simmer for 2-3 mins.
  9. Add salt and black pepper to season.
  10. Add about 1 cup of pasta water and let it simmer for another 2-3 mins before adding your al dente pasta.
  11. Add your pasta in and about 3/4 of freshly grated parm. Mix vigorously until creamy.
  12. Plate it and top with more cheese, some freshly chopped basil and those beautiful lemon rinds.
  13. Serve & Enjoy!
