Peaches + Salted Maple Cream Crostata (Edit recipe)

Easy, refreshing + delicious, this dairy-free, egg-free + nut-free dessert, which can double as a savory-sweet appetizer, also happens to be vegan. Juicy, fresh, roasted peaches are drizzled with a simple salted maple cream. To keep the salted maple cream allergy-friendly I use a *secret* ingredient that may surprise you, but you’d never guess it’s in there (trust me, it’s SO good). Top with fresh mint from the garden and you’ve got a taste of summer in every luscious bite.

Ingredients

  • 1 whole Refrigerated Pie Crust, From box of 2; softened at room temperature for 5-10 minutes (can sub gluten-free refrigerated pie crust)
  • 3 - 4 whole Peaches, Fresh, ripe peaches; pitted & sliced into 1/4-inch thick slices
  • 3 Tbsp Primal Kitchen Vegan Mayo, Or your favorite vegan mayo
  • 3 Tbsp Powdered Sugar
  • 4 Tbsp Pure Maple Syrup
  • 0.125 tsp Sea Salt
  • 6 whole Mint Leaves, Fresh mint leaves (can chop, if desired); as garnish

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 400°. Line large cookie sheet with parchment paper.
  2. Carefully unroll pie crust; place on center of cookie sheet. Arrange peach slices over pie crust, leaving a 1-to-1 1/2-inch border around edges. Fold edge of pie crust over filling, forming pleats.
  3. Bake on middle rack of oven for 18-25 minutes, or until crust is golden.
  4. In small bowl, combine vegan mayonnaise, powdered sugar, pure maple syrup & sea salt. Cool crostata completely before drizzling 2-3 Tbsp Salted Maple Cream over peaches. Garnish with fresh mint.
  5. Slice into 6 portions (a pizza wheel works well for slicing). Spoon remaining Salted Maple Cream over each slice before serving.

Notes

To make gluten-free, substitute your choice of gluten-free, refrigerated pie crust (the kind you unroll).
