A gluten free version of my mom's holiday cookie tradition!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large bowl or mixer, beat together the butter and both sugars. Combine the egg, milk, vanilla extract, and Peanut Butter & Co. Smooth Operator Peanut Butter until smooth. In another bowl, combine the gluten free 1-to-1, baking powder, baking soda, and kosher salt until homogenous. Then carefully mix in the dry ingredients.
  2. On a dish, pour the additional granulated sugar. Measure out the dough into 20-22 equal sized balls and roll them in the sugar. Place them on baking sheets and bake for 13-15 minutes at 350F. Carefully pull them out and immediately place a holiday kiss candy in the center of each while still warm.
  3. Allow to rest for several minutes and enjoy!
