fajita steak meat
- 2 lb2 lb2 lb Sirloin Steak, I used bison top sirloin steaks

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Taco Seasoning - Primal Palate

- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
creamy peanut sauce
- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Peanut Butter

- 2 Tbsp2 Tbsp2 Tbsp Peanut Butter Powder

- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper
- Water, to thin sauce

- Corn Tortilla

- Dill Pickle Spears
- Cotija Cheese, or queso fresco
- easy baked bacon (click for recipe), chopped
- Cilantro, finely chopped
- Jalapeño Botana Sauce - Siete Foods, or hot sauce of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a bowl, toss together steak mix together steak, seasoning, apple cider vinegar, & lime juice; marinate for at least 30 minutes, up to 6 hours.
- heat a griddle (425) or skillet, then add steak & cook for 2-3 minutes per side or until reached desired doneness.
- rest steaks until veggies are ready, then slice against the grain in thin strips.
- in a skillet, saute peppers & onions until tender.
- in a bowl, combine all ingredients for creamy peanut sauce; add water until reaches desired consistency.
- to build tacos, first lightly warm corn tortillas.
- to tacos, first add a smear of creamy peanut sauce.
- layer on sauteed veggies, sliced steak, pickles, cheese of choice, bacon, & cilantro.
- finish with a drizzle of hot sauce of choice (I mixed together siete’s chamoy & jalapeno botana sauce).
