Ingredients
pecan shortbread crust
- 2 oz2 oz2 oz maple keto granola (click for recipe), or granola of choice
- 111 Cinnamon Cashew Crunch Protein + Superfood Bar - B.T.R. Nation

- 1 oz1 oz1 oz Organic Sprouted Pecans - Lark Ellen Farm

- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1/2 tsp1/2 tsp1/2 tsp Sea Salt

- 2 Tbsp2 Tbsp2 Tbsp mixed nut butter (click for recipe), or nut butter of choice, softened in the microwave for 15-30 seconds
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Water
protein salted caramel
- 0.5 cup0.5 cup0.5 cup Medjool Dates, pitted & soaked in hot water for 10 minutes
- 1/4 cup1/4 cup1/4 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Almond Butter, or nut butter of choice

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1/2 tsp1/2 tsp1/2 tsp Sea Salt

- 1/2 cup1/2 cup1/2 cup Cottage Cheese
for topping
- 24 - 3024 - 3024 - 30 Organic Sprouted Pecans - Lark Ellen Farm, 1 half per bite

- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Bourbon Barrel Smoked Vanilla Finishing Salt - Texas Salt Co., or regular sea salt

pecan shortbread crust
- preheat oven to 350.
- in a food processor, add maple keto granola, BTR bar, pecans, monk fruit, & salt; blitz into powder.
- add softened nut butter + water to crust & mix well.
- using a small sized cookie scoop, add a scoop of crust mixture to the bottom of a 24 silicon mini muffin tin.
- bake for ~8-10 minutes; let cool completely.
protein salted caramel
- to a food processor, add all ingredients for protein salted caramel.
- slowly add a little water as needed to thin out a bit.
assembling your bites
- add a small sized cookie scoop of protein salted caramel to each bite.
- add 1 pecan half + a sprinkle of salt on top.
- refrigerate or freeze & enjoy!
