, & just as fun!the OG pepperoni pizza lunchable (aka my fav 🍕) just got a grain-free glow-up: mini simple mills crusts, cottage cheese–infused pizza sauce, pepperoni + jerky, cheese, & any of your favorite toppings.
oh, and let’s be real… it’s never complete without the sweet treat 😉
Ingredients
mini "naan" pizza crusts
- 9.8 oz9.8 oz9.8 oz Almond Flour Pizza Dough Baking Mix - Simple Mills, 1 box
- 1 Tbsp1 Tbsp1 Tbsp Psyllium Husk, Ground

- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Apple Cider Vinegar
- 4 - 6 Tbsp4 - 6 Tbsp4 - 6 Tbsp Water
creamy pizza sauce
- 10 oz10 oz10 oz Tomato Sauce
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Amore [Italian] Seasoning - Primal Palate

- 0.5 cup0.5 cup0.5 cup Water
- 1 cup1 cup1 cup Cottage Cheese
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Nutritional Yeast, optional for more of a “cheesy” taste

toppings
- Pepperoni
- Chicken Pizza Mini Meat Sticks - The New Primal, or any meat sticks you like

- Mozzarella, shredded, may sub cheese of choice
- Peperoncini Peppers, + other toppings - olives, basil, red pepper flakes, etc.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
mini “naan” pizza crusts
- preheat oven to 375.
- in a large bowl, combine pizza crust mix & psyllium husk.
- in a separate bowl, whisk together greek yogurt, ACV, & water.
- add liquid ingredients to dry & create into a dough; add any additional water as needed.
- cut dough into ~20 pieces, then flatten out into round little discs.
- bake for 12-15 minutes (flipping at about 8-10 minutes) or until golden brown on top.
creamy pizza sauce
- add all ingredients, except cottage cheese & nutritional yeast to a sauce pan; simmer for 8-10 minutes.
- remove from heat & allow to cool.
- add sauce + cottage cheese & nutritional yeast to a food processor & blend.
building your lunchable
- to a lunch box, add: mini “naan” pizza crusts, a container of creamy pizza sauce, pepperoni &/or jerky sticks, shredded cheese, & any other additional toppings or sides.
- when ready to eat, layer sauce, meat, cheese onto the crust. enjoy cold, or warm briefly in the microwave or under a broiler.
- make sure to serve with a sweet little treat!
