Pink Grapefruit Chia Pudding
The chia pudding is flavored with the pink grapefruit juice and a bit of zest. The beauty are those segments and pom seeds, such an eye pleaser! I added the pistachio’s for a contrast of color and texture, so as it turns out, it ended up being the perfect dish for any holiday morning! Prep everything the day ahead and you’re all set for an easy dish the next morning!
Ingredients
- 1.5 cup1.5 cup1.5 cup Almond Milk, or milk of choice
- 1 whole1 whole1 whole Red Grapefruit, pink, approx. .5 cup, juice of
- .5 tsp.5 tsp.5 tsp Grapefruit Zest, pink
- .25 cup.25 cup.25 cup Chia Seeds
- 3-4 Tbsp3-4 Tbsp3-4 Tbsp Honey
- .125 tsp.125 tsp.125 tsp Redmond Real Salt
- 2 pieces2 pieces2 pieces Red Grapefruit, drops doterra essential oil (opt)
- 1 whole1 whole1 whole Red Grapefruit, pink segments, pomegranate seeds & chopped pistachios for garnish or nut of choice
- .125 cup.125 cup.125 cup Pomegranate, arils, optional
- .125 cup.125 cup.125 cup Roasted and Salted Pistachios, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine coconut milk, grapefruit juice, zest, chia seeds, honey, salt and essential oil if using. Stir with a whisk and make sure chia seeds are all separated and well dispersed. Place in the fridge for about 15 minutes and then whisk again. It should be thickening up. Now, depending on the brand of coconut milk you use, it could be the right consistency or you may need to add more chia seeds if you want it thicker or possibly more coconut milk if itu2019s already too thick. It really will just vary depending on the brand. Taste for flavor and add more honey at this point if you need to. Place back in fridge and let set overnight.
- Prepare grapefruit segments and pom seedsu2026which you can also do ahead of time and is a huge time saver. Both the segments and the pom seeds can be stored in the fridge for a couple days.
- The next morning, spoon a little pudding into serving bowl, and if you have a clear bowl make sure they’re around the outside so they show!! Spoon more pudding on top and then add grapefruit segments, more pom seeds and chopped pistachios or nuts of choice.
