This pink pasta recipe is creamy, colourful and incredibly easy to make. Made with beetroot and cream, the sauce has a beautiful natural pink colour and comes together in just a few minutes.

It’s the perfect recipe for a quick lunch or an easy weeknight dinner when you don’t have much time but still want something delicious and a little different.

I used rigatoni, but you can use any type of pasta you have at home!

  2. 1. Cook the pasta
  3. Bring a large pot of salted water to the boil and cook the pasta according to the package instructions until al dente.
  4. Before draining, reserve a little pasta water.
  5. 2. Make the creamy beetroot sauce
  6. Add the cooked beetroot, cooking cream, soy sauce and olive oil to a blender.
  7. Blend everything until you have a completely smooth and creamy pink sauce. Season with salt and black pepper to taste.

  9. Pour the beetroot sauce into a large pan and warm it gently over low heat.
  10. Add the cooked pasta and toss everything together until the pasta is completely coated in the creamy pink sauce.

Tips for the Best Pink Pasta

Avoid cooking the sauce over high heat for too long. It only needs to be gently warmed before adding the pasta.

I love using rigatoni because the creamy beetroot sauce gets inside the pasta, but penne, fusilli, spaghetti or other pasta shapes work perfectly too.

What Can I Add to Pink Pasta?

Try adding feta, goat cheese or Parmesan for extra flavour. Fresh parsley or basil adds freshness, while walnuts or toasted pine nuts are perfect if you want a little crunch.
