- How to Make This Pink Pasta Recipe
- 1. Cook the pasta
- Bring a large pot of salted water to the boil and cook the pasta according to the package instructions until al dente.
- Before draining, reserve a little pasta water.
- 2. Make the creamy beetroot sauce
- Add the cooked beetroot, cooking cream, soy sauce and olive oil to a blender.
- Blend everything until you have a completely smooth and creamy pink sauce. Season with salt and black pepper to taste.
- 3. Combine the pasta and beetroot sauce
- Pour the beetroot sauce into a large pan and warm it gently over low heat.
- Add the cooked pasta and toss everything together until the pasta is completely coated in the creamy pink sauce.
- If necessary, add a splash of reserved pasta water to make the sauce even creamier.
- 4. Serve
- Serve your pink pasta immediately.

I love using rigatoni because the creamy beetroot sauce gets inside the pasta, but penne, fusilli, spaghetti or other pasta shapes work perfectly too.
