Pizzelle Lemon Tiramisu
Elevate your summer dessert with this single serve lemon tiramisu. It's no bake, lightly sweet and so creamy and refreshing.
Ingredients
For the Mascarpone Cream
- 0.5 cup0.5 cup0.5 cup Heavy Whipping Cream
- 4 Tbsp4 Tbsp4 Tbsp Granulated White Sugar

- 1 tsp1 tsp1 tsp Lemon Extract

- 0.666 cup0.666 cup0.666 cup Mascarpone Cheese
For the Tiramisu
- 3 whole3 whole3 whole Reko Pizzelle, lemon flavoured
- 0.5 cup0.5 cup0.5 cup Coffee, Brewed

- 6 Tbsp6 Tbsp6 Tbsp Lemon Curd, more or less, depending on your preference
- 1 whole1 whole1 whole Lemon Zest

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium-sized bow, add heavy whipping cream and use a hand mixer to whip until light and fluffy.
- Add in granulated white sugar and continue to mix well.
- Add in a splash of lemon extract, then add the mascarpone and fold with a spatula until smooth and creamy. Set aside.
- To a glass, add one pizzelle, then spoon teaspoons of coffee on top to soften the pizzelle.
- Spoon 3-4 tbsp of the mascarpone cream mixture on top of the soaked pizzelle and spread out evenly.
- Spread a thin layer of lemon curd over the mascarpone cream, add another pizzelle and repeat the process two more times.
- Top the final layer with more lemon curd, then zest a whole lemon on top.
- Place in the fridge overnight to set before enjoying.
Notes
How to store: place in the fridge in an airtight container for up to 4 days.
