Polenta
My whole family loves corn. Polenta is such a comforting dish. It can be a main dish for breakfast or a side dish for dinner. And it is very versatile with what toppings you can add so have fun and experiment. You can make this dish vegetarian or vegan, see notes.
Ingredients
- 2 cups2 cups2 cups Chicken Stock, or Vegetable stock

- 1 cup1 cup1 cup Cornmilk - Maizly

- 3 Tbsp3 Tbsp3 Tbsp Butter, Salted

- .5 tsp.5 tsp.5 tsp Sea Salt

- 1 cup1 cup1 cup Corn Grits (Polenta)
- 4 pieces4 pieces4 pieces Bacon

- 111 Green Onion (Scallion), sliced thin

- .5 cup.5 cup.5 cup Gruyere Cheese, shredded, or you can use Parmesan

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- I start by cooking te bacon. I like to slice it raw and cook it in a small pan on medium heat then remove to a plate to drain.
- In a medium pot add stock, milk, and butter. Cook on medium-high heat until boiling. Stir periodically.
- Whisk in the polenta and lower heat to low.
- Cook for 5-6 minutes, stirring periodically.
- Spoon into bowl and top with cheese, bacon, and scallions.
Notes
You can also top with red onions, cheddar cheese, Parmesan cheese, cilantro, tomatoes, or bell peppers chopped very small.
