Italian Beef Stew (Paleo)
This dish is called Spezzatino and is a lighter version of the traditional tomato and red wine based beef stew. A slow cooked meat is reminiscent of Sunday dinners. This paleo version does not use the typical wheat flour, but uses arrowroot flour in its place. A total hit with my family I hope you enjoy.
Ingredients
- 2 lb2 lb2 lb Beef Chuck Roast, Large cubes, about 3”
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 1 tsp1 tsp1 tsp Sea Salt
- .5 tsp.5 tsp.5 tsp Black Pepper
- 1 cup1 cup1 cup Pinot Grigio, or other dry white wine
- 1.5 cups1.5 cups1.5 cups Beef Bone Broth
- 2 tsp2 tsp2 tsp Italian Seasoning
- 1 whole1 whole1 whole White Onion, Medium diced
- 3 pieces3 pieces3 pieces Carrots, Medium diced
- 3 pieces3 pieces3 pieces Celery, Medium diced
- 1 cup1 cup1 cup Frozen Peas
- 3 Tbsp3 Tbsp3 Tbsp Water
- 2 Tbsp2 Tbsp2 Tbsp Arrowroot Flour, or arrowroot powder
- 1 cup1 cup1 cup Corn Grits (Polenta)
- 2 cups2 cups2 cups Water
- 1 cup1 cup1 cup Goat Milk, Or other milk, unsweetened
- 1 cup1 cup1 cup Parmesan Cheese
- 1 tsp1 tsp1 tsp Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Put salt and pepper on cubed beef.
- In an Instant Pot sear the cubes of beef in oil for about 3-4 minutes per side to golden brown. Do this in batches, don’t overcrowd the pan.
- Add wine, broth, and seasoning and let cook for 1 minute.
- Turn pot on slow cook, low heat. Cook for 2 hours.
- Add onions, carrots, celery and cook for 2 hours.
- Add peas and stir.
- In a small bowl combine the water and arrowroot flour until blended. Add to the pot and stir.
- Cook for 15 minutes.
- Make the polenta. Heat water and milk in pan cook on medium high heat.
- Heat until almost foaming, stir periodically.
- Slowly add polenta while stirring, let cook on low for 20-25 minutes stirring periodically so it doesn’t burn.
- Add cheese and salt, stir.

To serve add polenta to bowl and top with beef stew. You can add zucchini or tomatoes to the stew if desired.
