Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 425 F.
  2. Combine the tofu, nutritional yeast, dried parsley, dried basil, onion powder, garlic, roasted red peppers, sun dried tomatoes, shallot, lemon juice, salt and pepper in a blender on high speed, until full combined and creamy.
  3. Pour the blended sauce into a sauce pan and simmer on low until heated through.
  4. Meanwhile, spread the cauliflower gnocchi on a sheet pan and drizzle with oil and salt. Bake for 20-25 minutes, flipping halfway through, making sure that the bottoms are crisp enough to prevent sticking.
  5. Pour heated sauce on top of cooked cauliflower and enjoy!

Notes

Before flipping the gnocchi, first make sure it's crispy on the bottom to prevent it from sticking to the pan.
