Protein Snickerdoodle Cookies
This was the first cottage cheese cookie flavor I created last year, and I needed to add it here to the blog so you can try ASAP.
These high protein snickerdoodle cookies are a great snack that also satisfies your sweet tooth. You DO NOT taste the cottage cheese but you DO taste a soft and chewy cinnamon cookie that is sure to please!

Ingredients
- 2 cup2 cup2 cup Low-Fat Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Almond Butter
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 2 tsp2 tsp2 tsp Vanilla Extract
- 0.5 cup0.5 cup0.5 cup Vanilla Protein Powder (Nuzest), click on the shopping cart for a discount

- 1 tsp1 tsp1 tsp Ground Cinnamon

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix all wet ingredients together (option to blend cottage cheese first).
- Add the rest of the ingredients until mixed. The batter will be wet, but you should easily be able to scoop and form into round cookies with your hands.
- Use a cookie/ice cream scoop and scoop batter onto parchment lined baking sheet. Form into cookies with your hands - they will be thick (these won't spread).
- Bake at 350 for 15 min. They will firm as they cool.
