  • 3 whole Red Onion, Thinly Sliced
  • 10 whole Lime, Juiced, (about 3/4 cup)
  • 3 cups Water
  • 1 Tbsp Salt, To taste

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Start by setting a tea kettle or pot of water to boil.
  2. Thinly slicing your red onions. I like to cut my onion down the center and slice half moon shaped onion slices. Set to the side.
  3. Slice your limes, and juice into a separate bowl.
  4. Once all your ingredients are prepped, use an XL Mason Jar (I like to use the 1L sized) and add all your onions.
  5. Once full, carefully add boiling water until 3/4 of the way full. Add lime juice and pinch of salt.
  6. Carefully seal mason jar, and let cool on counter for 20-30 minutes. Onions will continue pickling over time, but will be ready as quick as 30 minutes!
  7. Place in fridge and store for up to two weeks! Provecho amigos!

Notes

Optional: if you'd like to add some extra color to your pickled onions, add one small chunk of a raw beet!
