Quince & Apple crumble

Ingredients
- 2 whole2 whole2 whole Quince, peeled & chopped into bite sized chunks
- 2 whole2 whole2 whole organic Apple, peeled & chopped into bite sized chunks
- 0.75 cup0.75 cup0.75 cup Water
- 0.5 cups0.5 cups0.5 cups Coconut Sugar
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 tsp1 tsp1 tsp Ground Cinnamon, sweet
- 0.5 tsp0.5 tsp0.5 tsp ground Nutmeg
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 tsp1 tsp1 tsp Almonds, ground
- 2 cups2 cups2 cups Gluten Free Rolled Oats
- 1.5 cups1.5 cups1.5 cups Almonds, ground
- 0.5 cup0.5 cup0.5 cup Olive Oil
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Pure Maple Syrup
- 0.5 cup0.5 cup0.5 cup Coconut Sugar
- 0.75 cup0.75 cup0.75 cup raw Pistachios, or other nuts, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 180c fan assisted.
- Place quinces in a saucepan with the water, sugar(1/2 cup), lemon juice, cinnamon, nutmeg & vanilla. Bring to a simmer and cook for 5 mins or until the quinces are cooked and soft. Stir through the ground almond, then the apple and remove from the heat. Place in a dish and set aside.
- In a bowl, mix olive oil and maple syrup together, mix in the coconut sugar. Sprinkle in the oats, ground almonds and chopped nuts. Fold together until well combined. Dollop over the fruit mixture evenly.
- Bake in the oven for 25 mins until the top has started to turn golden in colour. Serve with ice-cream, cream or custard.
