Red Pepper & Kale Scramble with Blueberry-Pineapple
This is one of my favorite breakfast recipes because it can be easily varied and has high quality carbs, protein and fat! This Red Pepper & Kale Scramble is an easy recipe that packs your morning with nutrients. You can add cheese and onion for a little more too!
Ingredients
- 2 whole2 whole2 whole Eggs
- 1 tsp1 tsp1 tsp Extra Virgin Olive Oil
- .25 whole.25 whole.25 whole Red Bell Pepper
- 1 cup1 cup1 cup Kale

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Dice up red pepper
- Remove Kale leaves from stem and shred
- Heat pan with 1 tsp of olive oil
- Sauté red pepper
- Add Kale
- Crack two eggs and stir.
- Scramble until cooked and serve warm!
- Enjoy!

You can add cheese for added protein also!
