Red, White, & Blue Bark
If you're looking for a fun treat that has a veggie (that you can't taste), look no further!
This red white and blue bark uses white chocolate as the base and then has a cooked beat and yogurt blended together for the swirl. Top with blueberries (I used frozen but you can use fresh) and it’s one fun and festive treat!
Ingredients
- 1 whole1 whole1 whole Beets, Pre-Cooked
- 0.333 cup0.333 cup0.333 cup Plain Greek Yogurt
- 0.75 cup0.75 cup0.75 cup Organic Vegan White Baking Chips - Pascha Chocolate Co.

- 0.25 - 0.333 cup0.25 - 0.333 cup0.25 - 0.333 cup Blueberries, fresh or frozen, see notes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Melt your chocolate and spread on a parchment lined baking sheet.
- Blend the beet and yogurt together until smooth and swirl into chocolate.
- Top with blueberries and freeze for an hour before breaking apart.
- Store in freezer.
Notes
I used frozen wild blueberries which are smaller, so you probably could use 1/3 cup if using fresh blueberries.
