Chocolate Strawberry Protein Cookies (Edit recipe)

These CHOCOLATE STRAWBERRY PROTEIN COOKIES may be my favorite of the protein cookies I’ve created (this is cookie flavor #4!) If you don’t like cottage cheese, don’t worry - YOU DON’T TASTE IT. The strawberry really comes through here and it’s a beautiful thing. Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Mix the wet ingredients together in a bowl.
  2. Add all dry ingredients (aside from chocolate chips) and mix until everything is incorporated. Fold in chocolate chips. It will look crumbly and you will be confused how these will form into cookies - don’t worry, they magically do! If they are too wet, add a little more flour but you should very easily be able to scoop them into your hand and roll into a cookie shape. (See video)
  3. Flatten them on a parchment lined baking sheet (they won’t spread) and bake at 350 for 15-20 min.
  4. Let sit for at least 10-15 min before removing from pan. They will firm up as they cool.
