Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pre-heat your oven to 350ºF
- Peel bananas and place in a large mixing bowl.
- With a pastry blender or potato masher, mash bananas until they are a lumpy liquid consistency.
- Add apple sauce, maple syrup, honey, melted coconut oil, and egg. Whisk ingredients together until smooth.
- In a smaller bowl, flour, cinnamon, nutmeg, baking soda, and salt. Mix ingredients with a fork so that they are all well combined.
- Pour dry ingredients into wet ingredients. Fold in dry ingredients until all of the flour is mixed in. Try not to over mix..
- Next, fold in chocolate chips, shredded coconut, and nuts into your muffin batter.
- Line muffin tin with muffin liners. Spray liners with a mild oil like coconut or avocado oil(optional), and fill each liner almost all the way to the top with muffin batter.
- Bake muffins for 20-25 minutes, until the tops are golden brown, and a toothpick or a fork comes out clean when poked into the centre of one.
- Remove muffins and allow to cook on a cooling wrack or the counter.
- Enjoy!
