A sugar free banana muffin recipe sweetened with honey and maple syrup. A delicious healthy banana breakfast muffin, that could also be converted to a healthy banana cupcake!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pre-heat your oven to 350ºF
  2. Peel bananas and place in a large mixing bowl.
  3. With a pastry blender or potato masher, mash bananas until they are a lumpy liquid consistency.
  4. Add apple sauce, maple syrup, honey, melted coconut oil, and egg. Whisk ingredients together until smooth.
  5. In a smaller bowl, flour, cinnamon, nutmeg, baking soda, and salt. Mix ingredients with a fork so that they are all well combined.
  6. Pour dry ingredients into wet ingredients. Fold in dry ingredients until all of the flour is mixed in. Try not to over mix..
  7. Next, fold in chocolate chips, shredded coconut, and nuts into your muffin batter.
  8. Line muffin tin with muffin liners. Spray liners with a mild oil like coconut or avocado oil(optional), and fill each liner almost all the way to the top with muffin batter.
  9. Bake muffins for 20-25 minutes, until the tops are golden brown, and a toothpick or a fork comes out clean when poked into the centre of one.
  10. Remove muffins and allow to cook on a cooling wrack or the counter.
  11. Enjoy!
