Slathered with a simple, dairy-free Salted Cinnamon Butter, you’ll be snacking on this wonderful, richly-textured bread all day long.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 400°. Lightly grease a 9“ x 5“ ceramic loaf pan with plant butter or use nonstick avocado oil spray.
  2. Add almond milk and vinegar to small bowl; allow to sit 10 minutes.
  3. Place Cinnamon Roll Faux Joe in a stainless steel mesh strainer fitted atop a small pitcher or coffee mug. Pour almond milk mixture (homemade vegan buttermilk) over Faux Joe. Allow to “steep” 5-7 minutes. Use teaspoon to press down and push any milk remaining in Faux Joe grounds into mug (to extract as much flavor as possible).
  4. In large bowl, use hand mixer to beat to combine plant butter, maple syrup and sweet potato.
  5. In medium bowl, whisk to combine flour, baking soda, salt and cinnamon. Add to bowl with sweet potato mixture. Beat until mostly combined. Add Cinnamon Roll Faux Joe-infused buttermilk; beat to completely combine.
  6. Evenly spoon batter into prepared loaf pan, smoothing out top with rubber spatula, if needed.
  7. Place on center oven rack. Bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake additional 35 minutes. Allow to cool 30 minutes before carefully removing from pan to wire rack to continue cooling.
  8. To make Salted Cinnamon Butter, combine all ingredients in a small bowl. Spread butter over slightly warm or room temperature bread, sliced about 1-inch thick. Serves 8-10.

Notes

Wrap cooled loaf in aluminum foil. Store at room temperature for up to 3 days and up to an additional 2 days in refrigerator. Bread is also freezer-friendly for up to 3 months (Wrap cooled loaf tightly in plastic wrap, then wrap in aluminum foil and place in a resealable gallon-size freezer bag. To defrost, allow bread to sit at room temperature overnight). Dairy-free. Egg-free. Plant-based. Vegan. Peanut-free. Refined Sugar-free.
