Roasted Cauliflower Tacos (GF/DF/V/Soy Free)
This vegan taco recipe features delicious cauliflower roasted with taco seasoning, crispy Cajun chickpeas, creamy avocado and cashew crema, and tart pickled onions. Its the perfect flavor combination.
Ingredients
Tortillas
- 6 pieces6 pieces6 pieces Corn Tortilla
Crema
- 0.5 cup0.5 cup0.5 cup Plain Unsweetened (Forager Project) Cashewmilk Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Lime Juice
- 0.5 cup0.5 cup0.5 cup Avocado
- 0.125 cup0.125 cup0.125 cup Cilantro
- 0.25 tsp0.25 tsp0.25 tsp Salt
Cauliflower
- 1 head1 head1 head Cauliflower
- 1 whole1 whole1 whole Taco Seasoning, entire packet
- 0.333 cup0.333 cup0.333 cup Avocado Oil
Chickpeas
- 1 cup1 cup1 cup Chickpeas, drained
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil
- 1 tsp1 tsp1 tsp Cajun Seasoning
Pickled Onions
- 0.5 whole0.5 whole0.5 whole Red Onion, sliced thin
- 1 cup1 cup1 cup Dill Pickle Juice

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Onions
- Thinly slice onions and place in pickle juice (overnight is preferable).
Chickpeas
- Drain and pat dry.
- Cover with oil and seasoning.
- Place on a baking sheet.
- Bake in oven at 400 for 30 minutes.
Cauliflower
- Place in boiling water for 5 minutes.
- Drain and cut.
- Mix avocado oil and seasoning and cover all pieces evenly.
- Bake on a sheet pan at 425 for 25 minutes.
Crema
- Combine yogurt, avocado, lime juice, and cilantro in a blender.
- Blend until smooth and add salt.
Assemble
- Add crema to a warm tortilla.
- Add cauliflower and chickpeas.
- Top with pickled onion and cilantro.
