Ingredients

Tortillas

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

Onions

  1. Thinly slice onions and place in pickle juice (overnight is preferable).

Chickpeas

  1. Drain and pat dry.
  2. Cover with oil and seasoning.
  3. Place on a baking sheet.
  4. Bake in oven at 400 for 30 minutes.

Cauliflower

  1. Place in boiling water for 5 minutes.
  2. Drain and cut.
  3. Mix avocado oil and seasoning and cover all pieces evenly.
  4. Bake on a sheet pan at 425 for 25 minutes.

Crema

  1. Combine yogurt, avocado, lime juice, and cilantro in a blender.
  2. Blend until smooth and add salt.

Assemble

  1. Add crema to a warm tortilla.
  2. Add cauliflower and chickpeas.
  3. Top with pickled onion and cilantro.
