Roasted Red Pepper Sandwich
Roasted Red Pepper Sandwiches are so easy and delicious! The red pepper spread is one of my favorite things to put on a sandwich 😋
Ingredients
- 4 pieces4 pieces4 pieces Ciabatta, sliced in half
- 0.75 cup0.75 cup0.75 cup Red Pepper Spread with Eggplant and Garlic - Trader Joe's
- 0.75 cup0.75 cup0.75 cup Basil Pesto
- 0.5 cup0.5 cup0.5 cup Arugula
- 4 pieces4 pieces4 pieces Mozzarella Cheese, sliced
- 2 Tbsp2 Tbsp2 Tbsp Original Extra Virgin Olive Oil - Kosterina
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Sea Salt, flaky
- 0.25 cup0.25 cup0.25 cup Basil, Fresh
- 4 oz4 oz4 oz Prosciutto
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Toast the ciabatta to your liking.
- Then spread pesto on the inside of one half and red pepper on the other.
- Layer the sandwich with arugula, mozzarella, a drizzle of olive oil, pinch of flaky salt, fresh basil leaves, and prosciutto. Top with the remaining piece of ciabatta and slice in half before serving.
