We’re excited to share a delicious new recipe from one of our fans! Introducing Sabra's Cilantro Citrus Chicken Salad—a fresh, vibrant mix of juicy tomatoes, sweet corn, creamy avocado, red onion, and tender grilled chicken, all topped with a squeeze of lime and a sprinkle of cilantro.
And, of course, the magic ingredient? Big Mama's Calamondin Vinaigrette! Sabra knows how to pick a winner, and this zesty dressing ties all the flavors together with the perfect citrusy kick.
Ingredients
- 2 cups2 cups2 cups Lettuce, Romaine, mixed greens of romaine, arugula or spinach
- 1 cup1 cup1 cup Chicken Breast, grilled & sliced
- 1 cup1 cup1 cup Tomato, Cherry, halved
- 3/4 cup3/4 cup3/4 cup Sweet Corn, cooked (fresh or grilled for extra flavor)
- 1 whole1 whole1 whole Avocado, diced
- 1/4 cup1/4 cup1/4 cup Red Onion, thinly sliced
- 1/4 cup1/4 cup1/4 cup Cilantro, fresh, chopped
- 1 whole1 whole1 whole Lime, cut into wedges
- 1/3 cup1/3 cup1/3 cup Citrus Calamondin Vinaigrette - Big Mama's Backyard Garden

Process

- Prepare the Chicken – Season and grill the chicken breast over medium heat until fully cooked (about 6-7 minutes per side). Let rest, then slice into strips.
