Citrus Seafood Salad with Fennel & Watermelon Radish
Taking that classic Costco seafood salad and giving it a little spring makeover! Crunchy shaved fennel, watermelon radish, and lemony herbs make it feel super fresh and elevated — and it comes together in minutes!
Ingredients
- 1 whole1 whole1 whole Seafood Medley, I used Costco's Seafood Salad
- 1 whole1 whole1 whole Fennel, whole bulb, sliced very thinly
- 1 whole1 whole1 whole Watermelon Radish, sliced thin
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice
- .25 cup.25 cup.25 cup Green Olives
- 1 tsp1 tsp1 tsp Dijon Mustard
- .25 cup.25 cup.25 cup Citrus Calamondin Vinaigrette - Big Mama's Backyard Garden
- .25 cup.25 cup.25 cup Parsley
Process

- Toss fennel and watermelon radish in the dressing to marinate slightly (5–10 min).
