Sausage and Peppers Sandwiches
This amazing Sausage and Peppers Sandwich is filled with juicy Italian sausage, sweet peppers and onions, and a delicious herb butter that’ll knock your socks off.
Ingredients
Herb Butter
- .5 cup.5 cup.5 cup Butter, Salted, softened (1 stick; 4 oz); can also use unsalted

- 1 tsp1 tsp1 tsp Parsley, minced

- 1 tsp1 tsp1 tsp Basil, Fresh, minced

- 1 tsp1 tsp1 tsp Thyme, fresh

- .25 tsp.25 tsp.25 tsp Sea Salt, (optional)

- .25 tsp.25 tsp.25 tsp Black Pepper, cracked

- .25 tsp.25 tsp.25 tsp Cayenne Pepper

- .125 tsp.125 tsp.125 tsp Garlic Powder

- .125 tsp.125 tsp.125 tsp Onion Powder

Sausage, Peppers, and Onions
- 5 pieces5 pieces5 pieces Italian Sausage, Mild, links; 1 pound (can use pork, chicken or turkey)

- 222 Bell Pepper, julienned (red, yellow, orange, or combination)
- 222 Onion, yellow or sweet (halved and, sliced)
- 1 tsp1 tsp1 tsp Olive Oil

- 1 Tbsp1 Tbsp1 Tbsp Butter, Salted, can also use unsalted

- .25 tsp.25 tsp.25 tsp Garlic Powder

- .25 cup.25 cup.25 cup Water
- 111 Sea Salt, to taste

- 111 Black Pepper, to taste

Additional Sandwich Stuff
- 666 Hoagie Rolls, lightly warmed or toasted
- 111 Parsley, for optional garnish, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Herb butter
- Mix the herb butter ingredients until fully combined. Set aside.
Sausage, peppers, and onions
- In a pan over medium heat, sear the sausages in 1 tsp olive oil for 3 to 4 minutes, turning occasionally.
- Add about .25 cup of water to the pan, then cover the pan and reduce the heat to medium low. Cook sausages, covered, for 7 to 8 minutes.
- Remove the cover and cook for another 5 minutes, or until the water evaporates and the sausages reach 160F with an instant read thermometer. Remove the sausages from the pan and set them aside to rest.
- Once rested, slice the sausages into coins.
- To the same pan that you cooked the sausages in (keep the drippings for added flavor), add 1 tbsp of butter, along with the peppers and onions.
- Season the veggies with salt, garlic powder, and pepper, and saute until soft, about 20 minutes.
- Add the sliced sausages back to the pan, toss with the peppers and onions, and cook for a couple more minutes to heat them back up.
Assembly
- Spread some herb butter onto both sides of a hoagie roll. Top with the sautu00e9ed sausage, peppers, and onions and garnish with parsley, if using.
Notes
Note: If you’re making the herb butter ahead of time, form it into a log and wrap it in plastic wrap, parchment paper, or wax paper and place in the fridge. About 10 minutes before you’re ready to use it, remove it from the fridge to soften.
