Sautéed Radicchio with Brown Butter-Soaked Dates and Toasted Pistachios (Edit recipe)

I've been dreaming up this combo. What better way to complement the bitterness of radicchio than with crunchy toasted pistachios, sweet dates, the acidity from lemon, bite of saltiness, and nuttiness and richness from the browned butter?? This recipe feels so fancy and seems like it has a lot of steps, but it's SO easy and comes together really quickly (you can prep multiple components in advance too). I hope you love this as much as I do!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

Pistachios

  1. Add chopped pistachios to a dry pan on medium heat, along with 1/4 tsp salt.
  2. Dry toast, stirring frequently, until pistachios are fragrant and lightly browned, about 3-5 minutes.
  3. Wipe pan clean with a dry paper towel, then use for following steps.

Browned Butter Dates

  1. Add finely chopped dates to a bowl.
  2. Add butter cubes to a pan on medium heat, stirring frequently.
  3. Continue stirring butter and keep a close eye on it as it browns.
  4. First it'll melt, then become foamy and almost turn clear, then foam up again, and then you'll see the bits brown (and you'll smell the nuttiness and difference). This takes about 5-7 minutes on medium heat.
  5. As soon as butter solids begin to turn brown, turn off the heat and continue stirring.
  6. Pour browned butter over chopped dates, then set aside.
  7. Wipe pan clean with a dry paper towel once again, then use for following steps.

Radicchio

  1. Preheat pan on medium heat, then add olive oil (it seems like a lot but the radicchio soaks it all up).
  2. Add the radicchio, sauté to combine with olive oil, then sprinkle on salt and pepper.
  3. Once radicchio begins to wilt, add chicken broth and lemon juice, and allow to cook down.
  4. Cook until radicchio is browned and beginning to caramelize, about 10-15 minutes.
  5. Add radicchio to a plate, then squeeze fresh lemon juice on top, pour on brown butter-soaked dates, top with pistachios, and sprinkle with flakey salt.
  6. Serve immediately and DEVOUR.
