Sheet Pan Seekh Kebab with Roasted Veggies
Who doesn’t like sheet pan meals? If you are like me who loves them but forgets to make them often , this is a reminder to get on it!. This Seekh kebab recipe was brought to North Indian cuisine by the Mughal kings who hailed from Turkey and I made these kebabs with ground turkey, just a casual coincidence! The ground meat is flavored with aromatics, herbs and spices and it is then skewered and baked. It pairs perfectly with roasted red cabbage and the sweet potatoes for a delicious filling one pan meal. Go make this rather fancy looking meal that is deceptively easy!
Ingredients
For Seekh Kebabs
- 1 lb1 lb1 lb Ground Turkey, or other ground meat of choice
- 0.5 whole0.5 whole0.5 whole Red Onion, chopped finely
- 2 cloves2 cloves2 cloves Garlic, minced, can sub with garlic powder
- 1 tsp1 tsp1 tsp Ginger Root, grated, can sub with ginger powder
- 0.25 cup0.25 cup0.25 cup Cilantro, chopped finely
- 0.25 cup0.25 cup0.25 cup Mint Leaves, chopped finely
- 1.5 tsp1.5 tsp1.5 tsp Garam Masala
- 2 tsp2 tsp2 tsp ground Coriander
- 1 tsp1 tsp1 tsp Kashmiri Chili Powder, can reduce for less heat
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil, or oil of choice
- 1 tsp1 tsp1 tsp Salt
For Roasted Veggies
- 0.5 whole0.5 whole0.5 whole Red Cabbage
- 1 whole1 whole1 whole Sweet Potato
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil, or oil of choice
- 1 tsp1 tsp1 tsp Garlic, minced
- 0.5 tsp0.5 tsp0.5 tsp Garam Masala
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 1 tsp1 tsp1 tsp Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- FOR THE KEBABS
- PREHEAT oven to 425F
- PAT out any excess moisture from the ground turkey using a paper towel
- ADD all remaining ingredients under the Seekh Kebab section to the ground turkey and mix well
- MARINATE this mix in the refrigerator for at least 30 mins, this step is optional but enhances the flavors
- TAKE about 1/2 cup of the ground turkey in your hand and form it into a ball
- RUN the skewer through the meat and use a pressing motion with your hands to form a cylindrical sausage like shape around the skewer. If you find this step tricky, just make 5-6 inch sausage like cylinders with the meat without the skewers
- ARRANGE all the kebabs on the sheet pan
- FOR THE ROASTED VEGGIES
- CUT the red cabbage and arrange on the sheet pan
- MIX together a little oil, minced garlic, garam masala and salt in a bowl
- BRUSH both sides of the cabbage steaks with this mix
- CUT sweet potatoes into thin slices and arrange on sheet pan
- BRUSH or spray the sweet potato slices with oil and season with salt and pepper
- PUT the sheet pan with the kebabs, cabbage and sweet potato into the preheated oven to bake
- BAKE for 20-25 mins until the meat is cooked well
- REMOVE the skewers carefully onto a serving tray
- FLIP the veggies on the sheet pan and put them back in the oven for about 10-15 mins until the cabbage and sweet potato are roasted well
- REMOVE the sheet pan from the oven and arrange the cabbage and sweet potatoes on the serving tray along with the kebabs
- ENJOY this sheet pan dinner with a side of cilantro mint chutney or your dip of choice
Notes
You can use other ground meat instead of turkey, just make sure it is not super lean If you find shaping the kebabs on the skewer tricky, make 5-6 inch sausage like shapes without the skewers Fresh garlic and ginger can be substituted with garlic and ginger powder
