Shepherd’s Pie Paleo Style
Shepherd’s Pie is one of my favorite comfort dishes. It’s a great hearty meal to eat when the weather turns cold.
Ingredients
Stew
- 2 lb2 lb2 lb Stew Beef, grass-fed
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 5 sprigs5 sprigs5 sprigs fresh Rosemary, chopped
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Smoked Paprika
- 10-12 cloves10-12 cloves10-12 cloves Garlic, minced, divided
- 111 Yellow Onion, chopped
- 1 head1 head1 head Cabbage, coarsely chopped
- 444 Carrots, medium, peeled and sliced
- 4 pieces4 pieces4 pieces Celery, 4 stalks, sliced
- 6 oz6 oz6 oz Tomato Paste, 1 small can
- Chicken Stock, a few splashes of
- Salt and Pepper, to taste
- 1 lb1 lb1 lb Butternut Squash, cubed, optional
Cauliflower Mash
- 1 head1 head1 head Cauliflower, chopped into florets
- Coconut Milk, splash of
- 2 Tbsp2 Tbsp2 Tbsp Chives, chopped
- 3 Tbsp3 Tbsp3 Tbsp Onion, chopped
- Salt and Pepper, to taste
- 4 pieces4 pieces4 pieces Bacon, cooked & chopped
- Unsalted Butter, grass-fed, to taste
Bone Marrow
- 6 pieces6 pieces6 pieces Bone Marrow, 3" pieces
- Salt and Pepper

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Beef Stew
- In a bowl, marinate beef in olive oil, 6 cloves garlic, rosemary, smoked paprika for 2 hours, overnight is best.
- In a skillet, saute onion and rest of garlic over medium heat.
- Once cooked down, add beef and brown (until about medium rare). Add to crock pot.
- Add in chopped cabbage, carrots, celery, squash (if used), tomato paste, chicken stock. Season with salt and pepper.
- Cover and simmer for at least 6 hours.
Cauliflower Mash
- Place cauliflower in a steamer basket and steam until very soft.
- Blend in a food processor along with coconut milk.
- Once the desired consistency is reached, remove from food processor.
- Fold in chives, green onion, salt & pepper, and bacon. Also, if you’re allowing yourself ghee or grass-fed butter, add to taste.
Bone Marrow
- Preheat oven to 450° F.
- On a parchment-lined baking sheet, place bone marrow pieces marrow side up and roast for 20 minutes until bubbly.
- Remove and let cool.
Finishing Touch
- Layer stew in individual oven-safe bowls, or in a casserole dish, and top with mash.
- Once bone marrow is cooked, place into pie.
- Broil until brown on top (about 5-7 minutes) and serve.
- Enjoy.
Notes
If you have trouble finding grass-fed marrow bones, simply ask your butcher – they usually don’t have those out in the case. I’ve also learned that some butchers give away their bones if they are cutting shanks that day. Lesson: Make friends with your butcher.
